Insalata russa con sbriciolata di taralli alla curcuma

With this hot weather, the desire to cook is less and less, which means that the desire to eat food that is too hot is also less and less. What is the best solution for quick lunch or creating a tasty side dish?
Oh, but of course Russian salad mixed with the crunchiness of taralli!

Ingredients for 6 portions

  • 5 potatoes
  • 1 egg
  • 3 carrots
  • 100 g cubed cooked ham (or natural tuna)
  • 3 tbsp. mayonnaise
  • 150 g canned peas
  • coarse salt qty.
  • parsley (optional decorative)
  • Special curcuma Taralli Quattroemme: 300 gr.

METHOD

1. Peel the potatoes, cut them in half to cook earlier, and plunge them into boiling water for 15 minutes.

2. Meanwhile, start by cleaning the carrots and cutting them into cubes, and then boil them in a pot with water and salt until tender.

3. Toward the end of cooking the potatoes, add an egg to the same pot (as if you wanted to cook a hard-boiled egg)

4. Once the vegetables are cooked, drain them and add them to a bowl.

5. Peel the egg and cut it so it can be added to the vegetables.

6. Also add cooked ham (or tuna fish depending on what you like) and drained canned peas to the bowl.

7. Lastly, add the 3 tablespoons of mayonnaise and mix well. Then place the bowl back in the refrigerator.
8. Roughly chop the taralli to garnish your salad.

9. Plate the Russian salad using ramekins, add crumbled taralli and decorative parsley on top.

Eating vegetables is sometimes so easy, all you need is a little mayonnaise and crunchy taralli!

Tips

Of course if you don't like curcuma don't worry, there are taralli for all tastes! You can also use the doratelli.
