Street Food: the octopus burger

Narration of a first taste

But how great is it to walk and eat something in the meantime? It definitely makes you feel less guilty because you are doing activity, but it's also nice to enjoy what's around you while you eat something appetizing.😄 Let's face it, we ALL have our hands always busy with our phones, for work, to entertain ourselves, to wait for a paycheck notification... and we often don't catch the beauty around us.

*lungomare of Bari

However, when we are hungry and out and about of course we notice every single bar, bakery, or kiosk that is within our range!

So off we go, with our noses up to perceive all the fantastic scents of the city, we sniff: smell of focaccia freshly baked, smell of sautéing for the ragù, fried of panzerotti...But then comes like a train the smell of the sea, of the fishmongers with fresh fish there on the counter and at that moment you notice a quite distinctive sound coming from the shoreline near the rocks.

You turn toward that direction and find him, the burger maker busy curling the octopuses.
So you walk up and decide to order a nice octopus burger, which has now become a must in Bari street food mainly in the summer. Then the baker, after finishing curling the main ingredient, takes the turtle-shaped bread and cuts it into two equal parts. In the meantime, he sets the octopus on the grill and cooks it nicely but without burning it. Finally he dips the cephalopod in a sauce made of oil, pepper, lemon and parsley, and places it in the center of the bread, roll wrapping it in paper so he can hand it to the customer.

I hope I've made the point well
also because now I'm hungry!

So I leave you with the idea of the sensations at the first bite, initially you will feel the lemon and oil (especially on your fingers),then the bread soft and crunchy at the same time, and finally the explosion of the sea...
In short "u panin cu pulp arsteut" (the roasted octopus burger, in dialect), will make you want to go swimming in the sea even in January!
Remember that this is just one of the many types of dishes you can find in the city, but in our Apulia region in general, so I highly recommend that you try them all.
