Zuppa di piselli, aglio e tostini

When the cold weather does not want to leave us, it happens that we need something warm and perhaps tasty that we can prepare for lunch or dinner. That's why soups come to us to delight us and, above all, warm us up! Together with our toasties then, you won't even need to cook pasta.

Ingredients for 3 people

  • Dried peas: 500 gr. (also not left to soak)
  • Onions: 100 gr.
  • Leeks: 100 gr.
  • Carrots: 50 gr.
  • Celery: 35 gr.
  • Garlic: 1 clove
  • Olive oil: 1 teaspoon
  • Broth: 500 ml.
  • Water: 250 ml.
  • Salt: to taste
  • Tostini 200 gr. Quattroemme.

METHOD

1. Prepare the vegetables: finely chop the onion, leek, carrots and celery. Cut or crush the garlic clove as well.

2. Rinse the dried peas under running water and drain them well.

3. Warm the olive oil in a pot, and add the onion and leek, stirring regularly for 4 to 5 minutes.

4. Next add the carrot, garlic, and celery and cook for another 5 minutes, swirling occasionally.

5. Then add the peas and the broth (which can be meat or vegetable).

6. Also put in the water with salt, and let everything bring to a boil for about 60 minutes without a lid. Just enough time for the peas to tenderize.

7. After cooking, pour the soup into soup bowls or soup bowls, and add the toasts to give crunch.

So the cold day will take a turn.

Tips

You can also use for the soup the riccetti if you like, or the multigrain tarallini. It all depends on how hungry you are!
