Here at home there is more than one country with a certain "veneration" for onions, but how can you blame them, they look good in all sauces.

In this case, however, we are not talking about the use of onion in soups, or as a soffritto, but rather it becomes the undisputed star of the ONION CALZONE.

We will not talk about his recipe, because there are so many variations that even change from family to family, and a whole site would not be enough to collect them all!

Bittersweet curiosities

The onion calzone was actually originally not made with white or red onions, but rather with a very particular type found in the provinces of Bari the spouses.
They are still used today, but many do not know the origin of the name of these particular onions, which are often confused with leeks but are two quite distinct things!

During weddings (i.e., wedding vows) in the South, it is typical to offer a very large assortment of all kinds of food, including our onion calzone, which was precisely made from the spouses!

In fact, this onion is dialectally called this precisely because of the reference to wedding vows, which were the perfect occasion (or the perfect excuse), for eating all kinds of dishes.

The term is derived from the masculine adjective and noun "spousal" [from Latin sponsalis, a derivative of sponsus (groom)], respectively, "conjugal" and "marriage."

I've never tried my hand at making the calzone, let's just say I'm the type who prefers to eat things rather than cook them...like one of the judges on those series with star chefs.

But the calzone my mom makes is really exquisite, she puts in lots of anchovies, lots of onions and few olives ( yeah I don't like olives), and we devour it in one bite!

Also, that aphrodisiac smell that fills the house, and doesn't go away until the next day, always takes you back in time and you imagine grandma cooking calzone for all you grandchildren, because we didn't know when we were kids that those were onions!

Finally, I can assure you that there is no wrong recipe to make onion calzone, it can be made with any kind of ingredient you want to add in order to satisfy all palates.

Because after all, it's nice not to make anyone feel left out, even at the dinner table🍴
